PUMPKIN OAT MUFFINS

These muffins have 7g of protein each (and it could be more depending on the protein you use) they are under 100 calories, low sugar and fat.
🎃PUMPKIN OAT MUFFINS🎃
2 cups oats (blended into oat flour)
½ cup vanilla protein ( I use @goodprotein – use code JEANNESC30 for 30% off)
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1/2 pumpkin pie spice
1 tsp cinnamon (don’t be shy)
1 ½ cups pure pumpkin purée
2 eggs
¼ cup maple syrup
⅓ cup milk (I use @yofiit)
2 tsp vanilla extract
1/3 cup dark chocolate chips (optional ~ I put them in!)
~ Blend oats in a blender or food processor until you have a fine oat flour.
~ In a large bowl, mix together the oat flour, protein powder, baking soda, baking powder, salt, and pumpkin pie spice.
~ In another bowl, mix pumpkin purée, eggs, sweetener, milk, and vanilla until smooth.
~ Fold the dry ingredients into the wet until just combined.
~ Grease a muffin pan.
~ Divide the batter evenly into a muffin ~ Bake for 20-25 minutes on 350 degrees or until a toothpick comes out clean.
~ Let cool slightly and enjoy warm, or store for later.
