CARROT & APPLE PROTEIN MUFFINS

The magic in my kitchen continues with this super moist muffin recipe! Nutrient-dense with 5.5g of protein each, loaded with fibre and will definitely support your health goals!

THE RECIPE:
In a bowl add:
2 bananas, mashed (2.6g)
2 eggs (6g)
1/2 cup apple, peeled & shredded
1 cup carrot, shredded (1g)
2 tsp vanilla
1/2 cup plain Greek yogourt (9.4g)
2 scoops (2/3 cup) of vanilla cupcake @goodprotein (42g)
1/4 cup gluten free flour (2g)
1/2 tsp cinnamon (I’m not shy)
2 tsp baking powder
1/3 cup raisins
4 tsp pumpkin seeds (3.4g)
~ fold ingredients together gently
~ scoop mixture evenly into a greased muffin tin
~ bake at 350 degrees for 25 minutes or until toothpick comes out clean
~ makes 12
